Easy Banana Muffins – Recipe

published by ToSsGirL on Jul 20, 2010

Muffins are great to go with tea as a snack. You can add your own favorite ingredients and it will still be good!

Ingredients:

Makes an estimate of around 8 muffins.

  • 2-3 bananas depending on their size.
  • 330gr of flour.
  • 200gr of fine cane sugar.
  • 3 teaspoons of baking powder.
  • 115gr of butter.
  • 240ml of milk.
  • 3 eggs. *1 of the eggs will be yolk only!*

Directions:

  1. Preheat the oven to 180 degrees Celsius (356 Fahrenheit ) and melt the butter in a pan or a microwave.
  2. Use the melted butter to brush the insides of your muffin cups.
  3. Take a big bowl and mix the flour, the sugar, the baking powder, the melted butter, and 3 eggs, 1 being YOLK only.
  4. Mix the mixture, and when the mixture is pretty consistent, add the milk.
  5. Mix it until it slowly drips or falls off your spoon. (If its to thick, add flour. If its to thin, add milk)
  6. Scoop in your favorite fruits. In this recipe, we will be using bananas. (You can use any other fruit of course)
  7. Now scoop the dough into your muffin cups. (Don’t fill it to the top, as the muffins will rise a bit more in the oven)
  8. Add some sprinkles or sugar to the top of the muffins to caramelize them a bit better.
  9. Place it in the oven and bake for about 15 minutes.
  10. When you take it out, check if the muffins are done by poking a stick in it. If no mixture sticks on the stick, your done!
  11. Take the muffins out and let them cool down before you take them out of the cups.
  12. Enjoy them :)
