Easy Brownie Sundae Cups

What to do with the scooped out brownies? Crumble and mix with vanilla ice cream for another day’s dessert. One of my mom’s favorite delight.

Preparation Time: 20 minutes plus cooling
Baking Time: about 30 minutes
Yield: 2 dozen small cups

Ingredients

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter or margarine
1 1/2 cups sugar
3 large eggs, lightly beaten
2 teaspoons vanilla
ice cream or sweetened whipped cream

Preparation

1. Preheat oven to 350°F. Grease two small 12-hole muffin pans.

2. On waxed paper or a bowl, combine flour, cocoa powder, baking powder, and salt.

3. In a saucepan, melt butter over low fire. Remove from heat and stir in sugar. Add eggs and vanilla. Blend well. Stir in flour mixture. Spoon into muffin pan.

4. Bake until a toothpick inserted at the center comes out clean. Cool in pan for 5 minutes. Run the tip of a small knife around edge of brownies to loosen. Invert on a wire rack and cool.

5. Cut off the tops of brownies. Set aside. Scoop out some of the brownie center, making sure you don’t scoop through the bottom. Place a scoop of ice cream or sweetened whipped cream over the brownie cups. Replace the tops.
