Easy Food Processor Bread

published by JMartin on Jul 22, 2011

This food processor bread is so easy and there is no kneading needed for making this bread.

Would you believe that you can mix a loaf of bread in less than 5 minutes with no kneading, no punching down, and very little mess? It’s possible with a food processor that’s capable of kneading yeast breads. Here’s how.

In a small bowl, put:
1/2 cup -wrist-warm water
1 tablespoon honey or molasses or sugar
1 tablespoon dry yeast

Stir to dissolve. Let sit for 5 minutes.

Place the steel blade in your food processor. Then put into the container:
3 cups unbleached white flour
1 tablespoon vegetable oil
1 teaspoon salt
1 cup plain yogurt

Process momentarily. Add the yeast mixture through the chute and process until the dough forms a ball. Remove to a floured board and cut the ball into four pieces. Return two of the pieces to your container. Process again until a ball is formed. Remove to the floured board. Repeat with the other two pieces of dough. On the floured board, shape the two dough balls into one loaf. Place in a loaf pan coated with spray oil and brush the dough with oil, cover with foil, and let sit in a warm spot until doubled in bulk.

Bake in a preheated 350-degree oven for about 45 minutes or until the bread pulls away from the sides of the pan and gives a hollow sound when you thump the bottom with your fingers. Makes 1 loaf.

Variations:
You can easily make any type of bread you like if you stick to these proportions of liquid and dry ingredients. Remember, the yogurt enables you to make the bread with only one rising— the one in the pan. Try these flour mixtures:

2 1/2 cups unbleached white flour
1 cup whole wheat flour or rye flour
1/2 cup bran
or 2 l/2 cups unbleached white flour
