Easy Pumpkin (Chocolate Chip) Muffins

These simple muffins are great for a thanksgiving desert or just for a treat!

4 eggs

2 cups sugar

1 cup pumpkin puree

1 1/2 cups vegetable oil

3 cups flour

2 tsp. baking soda

2 tsp. baking powder

1 tsp. cinnamon

1 tsp. salt

Chocolate chips (optional)

Preheat oven to 400 degrees. Mix eggs, sugar, pumpkin, and oil until smooth. Add in the dry ingredients and mix well. Add in chocolate chips (if you want) and mix until even. Fill muffin cups 3/4 full and bake 16-20 minutes at 400 degrees. Makes 24 muffins. You can also freeze and reheat them for an easy snack!

    These were very good but my family and I think that they are missing something…like a spice-not sure what though. I followed the recipe exactly except I used mini chocolate chips. Definitely will make again
