Mandazi are a type of African fried bread enjoyed in multiple African countries. They are simple to make and are a great snack. You can enjoy this international treat easily by making the mandazi yourself. Here is how.
Start by placing a teaspoon of dry yeast in ¼ cup of lukewarm water, stir and set to the side. Then, in a larger bowl, combine six cups of flour, ¾ cup of sugar, 1+1/2 teaspoon of cinnamon, 1 teaspoon of ginger and ½ teaspoon of salt. Momentarily set these dry ingredients aside.
Then place one beaten, room temperature egg in a small bowl with two cups of warm water, ¼ cup of lukewarm milk, and two tablespoons of oil. Finally, add the yeast and water mixture you made earlier to the egg mixture and mix it all together. Finally combine the liquid mixture with the dry flour mixture and kneed.
As you kneed, keep adding additional flour until the dough does not stick to your fingers, but is still soft and pliable. Once that is achieved, cover the dough with a cloth and place in a warm place to rise for an hour.
After the hour has passed, punch down the dough and separate into manageable amounts to roll out and cut into small desirable shapes. Then deep fry the cut dough in a pan of oil heated over medium heat until they are puffy and golden brown. Remove from the oil and allow them to cool a little before enjoying your African treat.
