Extra Moist Chocolate Pound Cake with Chocolate Glaze

A very rich dessert. Delicious served with a tall glass of milk.

Ingredients

 

2 c. sugar

1 3/4 c. all-purpose flour

3/4 c. cocoa

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

2 eggs

1 c. milk

1/2 c. vegetable oil

2 tsp. vanilla flavoring

1 c. boiling water

 

Method

 

1) Preheat oven to 350 degrees.

 

2) Grease and flour a bundt cake pan.

 

3) Mix together sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl. Add eggs, milk, oil and vanilla. Beat with electric mixer at medium speed for 2 minutes.

 

4) Stir in boiling water (batter will be very thin) and mix well. Pour into prepared bundt cake pan.

 

5) Bake for 1 hour or until toothpick inserted into cake comes out clean.

 

6) Cool for 15 minutes in the pan. Remove from pan and let cool completely. 

 

Chocolate Glaze

 

Ingredients

 

3 Tbsp. cocoa

2 Tbsp. margarine, melted

1 c. powdered sugar

3 Tbsp. hot water

 

Method

 

Combine all ingredients together in a medium size bowl. Mix with a wire whisk until smooth. Pour over top of cooled Pound Cake.

    I made this cake this morning. It is a nice, moist chocolate cake. But…. it is not a POUND cake. Baking a cake in a bundt pan does not make it a pound cake. It does not have the dense texture of a pound cake. If you just want a nice, moist, flavorful chocolate cake this will fit the bill nicely. If you want a pound cake…find another recipe. A true pound cake has more than 1/2 cup of butter or shortening.
