Flour Tortillas

2 cups flour

1/4 teaspoon salt

1/2 cup very hot water

3/4 teaspoon baking soda

1/4 cup lard or crisco

Combine flour, baking powder, salt and lard. Mix until fine crumbs. Add very hot water. Mix to form ball. Knead until smooth. Take a very small ball of dough (keep rest of dough covered so it won’t dry out.) and roll out real thin with a rolling pin, making a circle shape. Try not to add any extra flour, but if rolling pin sticks to dough, use flour lightly. On ungreased griddle, over medium hot flame, place tortilla. When  starts to bubble, turn over and cook on other side. Should not brown, but may have some brown spots. Cook very quickly. Use these tortilla shells as you would boughten ones.
