Fluffy Canadian Pancakes.

Ingredients

·         1 c. of all-purpose flour

·         1 tbsp of baking powder

·         1 c. of milk

·         3 large egg yolks

·         3 large egg whites

Directions

1.     In a medium-sized bowl, combine the flour and the baking powder. Stir in the milk and the egg yolk until smooth.

2.     In a large glass or metal mixing bowl, beat the egg whites until stiff peaks form. Now, you should fold 1/3 of the whites into the batter, then quickly fold in remaining whites until there is no streaks left.

3.     Heat a lightly oiled griddle or frying pan over around medium-high heat. Pour or scoop in the batter onto the griddle, using approximately 1/4 c. for each pancake.

4.     Now you should cook until the pancakes are golden brown on both sides

5.     serve hot.
