Frittata a La Vegetables
Having New Years brunch at your house this year? This easy recipe would start your year off well.

4 slices bread
9 eggs
3/4 cup of either 1% or low fat milk.
1 tsp italian seasoning
11/2 cup grated parmesan cheese
1 pound thawed frozen mixed vegetables
1. Preheat oven to 375F.
2. cut bread ino 1/2 inch cubes after you toast the bread
3.Whisk eggs, milk, seasoning, 3/4 tsp salt and a 1/2 tsp pepper. Stir in cheese, bread cubes and vegetables.
4. Grease 10″ ovenproof skillet. Heat over medium heat. Pour in egg mixture, cook ujntil eggs set. Transfer to oven, bake 30 minutes until golden.
A nice touch would be to sprinkle chopped parsley over it.
