Fudge and Apple Muffins.

Fudge and Apple Muffins

These muffins will not rise as much as normal but don’t worry.

Ingredients

125 gr light brown sugar

125 gr butter

250 gr self-raising flour

150 ml milk

2 eggs, beaten

3 dessert apples, peeled, cored and grated

10 pieces of soft fudge

½ tsp bicarbonate of soda

½ tsp ground cinnamon

 ½ tsp mixed spice

Method

Preheat your oven to 180c/gas 5 and line your muffin tin.

Melt the butter with the sugar and allow to cool slightly. Now stir in the milk and add the eggs.

Sift the flour, cinnamon, mixed spice and the bicarbonate of soda into a larger bowl and make a well in the centre.

Quickly stir the wet ingredients into the flour with no more than 12 whirls of a wire whisk and then fold in the grated apple.

Half fill the muffin tins, place a piece of fudge in the middle and add the remaining mixture. The tins should be almost full to the top.

Bake for 25-30 minutes or until cooked. Cool on a wire rack.
