Got Honey? Make Some Sweets!
Honey is a useful ingredient when baking sweet treats. Additional health benefits are gained when whole wheat flour is used to create these tasty gems.
Chewy Honey Cookies
5 cups whole wheat flour
1 tsp. salt
1 tsp. baking powder
1 tsp. each of cinnamon, ginger
1/2 tsp. each cloves, nutmeg
1 cup shortening
2 eggs
2 cups honey
1 cup lemon or lime soda
1 tsp. vanilla
Sift the dry ingredients together until light and fluffy. Combine the eggs, honey, shortening and vanilla. Beat well. Add the soda alternately with the dry ingredients. Chill the dough. Form into balls and flatten slightly. Bake for 8 to 10 minutes at 375 degrees for 15 minutes.
Tasty Pineapple Bread
2 cups whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1 cup raisins
1 cup walnuts
1 egg
1/2 cup honey
2 tbsp. oil
1 tsp. vanilla
1 cup crushed pineapple
1 tsp. soda
Sift dry ingredients. Add raisins and nuts. Beat together egg, honey, oil, and vanilla. Add to the flour mixture. Dissolve the soda in pineapple and stir in well. Th Bake in a loaf tin at 350 degrees for 1 hour.
Delightful Banana Cake
1 square butter
1 cup honey
2 cups whole wheat flour
1 tsp. baking soda
1 tbsp. sour milk
1/2 teaspoon salt
1 tsp. cinnamon
3 ripe bananas, mashed
1 cup raisins, boiled in 1/2 cup water
2 eggs
Cream together butter and honey, and then add beaten eggs, bananas, and raisins. Sift dry ingredients and add to mixture. Stir thoroughly. Bake in a cake pan for 1 hour at 325 degrees.

Oh I think I will make those honey cookies the first chance I get. I’ll have to get some soda. I don’t keep it in the house. These all sound really good. Thanks.
