Healthy Low Oil Recipe: Pumpkin Muffin
Do you want to know something to make that is healthy and delicious? Here it is pumpkin muffin recipe, which serves seven people. The Pumpkin muffins have lot of fiber with vitamin A and wheat flour. Due to the ingredients that this recipe constitutes, it is healthy with low oil.
With the Ingredients mentioned below, we can prepare 30 small muffins or 12 large muffins:
Ingredients for Pumpkin Muffin
Ø 2 large eggs
Ø ½ teaspoon of baking soda
Ø ½ teaspoon salt
Ø 1 teaspoon of baking powder
Ø ½ teaspoon of nutmeg and cloves
Ø 1/3 cup of canola oil
Ø 1 teaspoon of pumpkin-pie spice
Ø 1 15 ounce of pumpkin(dump from the can)
Ø 1 ½ cup of flour
Ø 1 ½ cups of wheat flour or white/wheat blend
Ø Mini-muffin pan
Ø Foils or paper muffin liners
Ø Use muffin pan with 12 (1/2 – cup) muffin cups instead of mini-muffin pans if required
Toppings Required for Muffins
o 1 tablespoon of sugar
o 1 teaspoon of cinnamon
Preparation
Ø First of all, pumpkin-pie spice should be prepared using the below ingredients
o Allspice
o Cinnamon
o Ginger
o Nutmeg
o Cloves
Ø Preheat oven, keeping temperature at 350 degrees F
Ø Keep the oven rack in the centre position
Ø Use liners in the muffin cups or make use of non-sticky muffin spray
Ø Take a small bowl and mix flour and baking powder
Ø Take another large bowl and mix the following
o Oil
o Cloves
o Pumpkin-pie spices
o Sugar
o Baking salt
o Eggs
o Pumpkin
Ø Whisk all these ingredients thoroughly and combine with the flour mixture
Ø In another small bowl, stir 1 tablespoon of sugar and cinnamon
Ø The batter is to be divided equally among the muffin cups so as to fill ¾ of the cups
Ø The topping mixture which is ready must be sprinkled over
Ø Bake for about 25-30 minutes if regular size muffins
Ø Bake for about 15-17 minutes for min-muffins
Ø Bake until they turn puffy and golden brown
Ø See to it that they bake in such a way as to insertion of skewer is also possible at the centre of the muffin
Ø Cool the muffins using pan for duration of 5 minutes
Ø From pan, you can then shift the muffins to the rack and cool or warm accordingly
