Holiday Baking: Banana Oatmeal Cookie I

THanksgiving and Christmas is coming soon. It is time to decide what you want to bake. I am starting a new series of baking for the holidays. I will put at least one recipe a day. This should give you plenty of time to get organized.

1 1/2 cup all purpose flour

1/2 teaspoon baking soda

3/4 teaspon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

3/4 cups vegetable shortening

1 cup granulated sugar

1 large egg

2 to 3 large bananas, mashed

1 3/4 cups rolled oats

1/2 cups almonds, chopped fine

preheat the oven to 400F degrees

Combine the flour , baking soda, cinnamon, nutmeg and salt

In a large bowl, cream the vegetable shortening  and sugar. Beat in the eggs and bananas. Gradually blend in dry ingredients . Fold in oats and almonds.

Drop the dough by spoonfuls 1 1/2 inch apart onto ungreased baking sheets.

Bake for 12-15 minutes, until lightly colored . Transfer to wire racks to cool.
