Honey Apple Bundt Cake

This is a moist and delicious bundt cake served warm or cold.


Please note: this recipe is for a 6 cup Bundt pan, if you have a larger pan, you may want to double the recipe.

1/2 cup granulated sugar
1/2 cup vegetable oil
1 egg
3/8 cup honey (approximately 1/4 cup plus 2 tablespoons)
1/2 teaspoon vanilla extract
1 1/4 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/8 teaspoon allspice
1 1/2 medium/large apples, peeled, cored, and chopped
Optional:
Additional powdered sugar/cinnamon/honey/chopped nuts to sprinkle on top

Preheat oven to 325 degrees.  Grease and flour a 6 cup bundt pan.

In a large bowl, stir together sugar and oil until uniform. Add egg and beat until light, then add honey and vanilla.  In another bowl, combine remaining dry ingredients, stir until uniform.  Add slowly to sugar/egg mixture, stirring after each addition.  Lastly, fold in the chopped apples.

Pour batter into prepared pan, bake for 45-55 minutes, or until toothpick inserted into cake comes out clean.  Allow cake to cool for 15 minutes before inverting on plate and adding desired toppings.  Below, the cake is pictured with powdered sugar, cinnamon, and warm honey drizzled on top.  Enjoy warm or cold, it’s delicious either way.
