How To Make Pear Walnut Muffins. You will need. 1-1/2 cups all-purpose flour, 1/2 cup packed brown sugar, 2 teaspoons baking powder, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/8 teaspoon salt, 1 slightly beaten egg, 1/2 cup cooking oil, 1/2 cup plain low-fat yogurt, 1/2 teaspoon vanilla, 1 pear cored, peeled and finely chopped, 3 tablespoons finely chopped walnuts, 2 tablespoons brown sugar. Step 1. Lightly grease twelve 2-1/2-inch muffin cups or line with paper bake cups, set aside. In a medium bowl combine flour, the 1/2 cup brown sugar, baking powder, cinnamon, ginger, and salt. Make a well in the center of the flour mixture. Step 2. In another bowl combine egg, oil, yogurt, and vanilla, add to flour mixture. Stir just until moistened fold. Step 3. Spoon batter into prepared muffin cups, filling each two-thirds full. For topping, combine walnuts and the 2 tablespoons brown sugar. Sprinkle over batter. Step 4. Bake in a 400 degrees oven about 20 minutes or until golden brown. Cool in muffin cups on a wire rack for 5 minutes. Remove from cups, serve warm. Enjoy.
