How to Make Queen Cakes

How to make delicious little queen cakes.

Ingredients    

       makes 12

  • 100g caster sugar
  • 100g margarine or butter
  • 2 eggs
  • 150g plain flour and half a teaspoon of baking powder or 150g self raising flour
  • flavouring: few drops of vanilla or lemon essence

Method

  1. preheat oven to 180 degrees fan
  2. put paper bun cases into a bun tin
  3. cream butter and sugar until pale and fluffy
  4. add half the eggs and half the flour and beat
  5. sift the remaining flour and/or baking powder into the mixture
  6. fold in the flour very gently
  7. using dessertspoons fill 2/3 of each bun case with mixture
  8. bake in oven for 15-20 minutes or until golden brown
  9. cool on a wire tray
