An overview on how to prepare fabulous semi-homemade blueberry or cranberry muffins.

Fresh blueberry muffins are absolutely fabulous.  However, many people don’t have the time to make muffins from scratch.  I have a tasty recipe for semi-homemade blueberry muffins.  Family and friends will absolutely love the muffins and I am sure you receive many compliments.

You will need 1 box of blueberry muffin mix, 1 package of fresh blueberries, 1-teaspoon vanilla extract, 2 eggs, and ½ cup water and ½ cup oil.

First, you need to follow directions on back of blueberry muffin box.  Once you combine all required ingredients into a large mixing bowl you need to then add the extra special ingredients that will give your muffins a homemade taste.

You need to add the extra package of blueberries in addition to the can that comes with the mix as well as 1 teaspoon vanilla extract.  Mix all ingredients well, do not use electric mixer.  After batter is well mixed you need to pour mix into greased cupcake trays.

Bake muffins according to box directions, usually about 20 minutes.  Once you remove the muffins from oven allow to oil for about 20-30 minutes.  If you want an extra rich and moist muffin melt 1 stick of non-salted butter and pour evenly over top of each muffin and serve.  Enjoy!!

If you like cranberry muffins, you can purchase cranberry muffin mix and an extra can of fresh cranberries.  Follow directions exactly as if you were making blueberry muffins only you are substituting cranberries for the blueberries.  The baking time should be exactly the same.
