Irish Soda Bread

An easy to make traditional Irish Soda bread. Goes great with stew, chili and soup.
Preheat the oven to 325 degrees.
First, make your instant buttermilk. Pour 2 tablespoons of vinegar into a measuring cup. Pour enough milk on top of the vinegar to reach the 2 cup mark on the measuring cup. Let sit for 10 minutes while you prepare the rest of the ingredients.
In a large mixing bowl, combine the following ingredients:
- 3 cups of all purpose flour
- 1 TBSP baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- ¼ cup sugar
- Stir these together with a fork until they are thoroughly mixed.
- In a medium mixing bowl, combine the following ingredients:
- 1 slightly beaten egg (not scrambled)
- Instant buttermilk (see instructions above)
Make a well in the dry ingredients. Add the egg and buttermilk mixture. Stir slowly until the dry is blended into the wet. The batter should be lumpy.
Melt ¼ cup butter. Stir the melted butter into the batter. Grease and flour a loaf pan. Cook at 325 degrees for 1 hour.

Can’t say I’ve ever tried it with chili but I’ll give it a go. I like it fresh from the griddle with butter.
