Mamon- Mommy’s Recipe

Filipino Sponge Cake.

Mamon is one of Filipino fine desserts. It is a fluffy, light, sweet sponge cake. You can find mamon in most Asian supermarkets and Filipino bakeries such as Goldilocks Bakery; however my mommy makes the best mamon. Below is her recipe. It is simple to make

INGREDIENTS

10 whole eggs

2 cups flour

2 cups sugar

½ cup melted butter

½ teaspoon vanilla

2 teaspoons baking powder

Toppings

2 egg yolks (slightly beaten)

sugar (optional)

grated cheese (optional)

sliced almonds (optional)

DIRECTIONS

  • Preheat oven to 350º F
  • Beat 10 pieces of whole eggs until thick and add 1 cup of sugar
  • On another bowl, sift 2 cups flour and baking powder. Combine them together with the beaten eggs and sugar
  • Next add the melted butter, vanilla, and the rest of the sugar to the mixture. Blend them all together
  • Line muffin pans with paper cups and pour mixture about 2/3 full (or if you have one at home, use the mamon molding tray)
  • Bake for about 15 minutes or until golden brown. Insert a toothpick. If it comes out clean, then it is finished
  • Once the mamon is out of the oven, brush the top with the egg yolk. It will add color and slight flavor
  • You may also sprinkle the top with sugar, grated cheese, and or sliced almonds
  • Wait for about 10-15 minutes before serving and happy eating!

    I make this sponge cake with less eggs, sugar and no butter. It is delicious, It’s so easy, my granddaughter makes it. I recommend it as find eating to everyone.

    I just made this mamon and I was actually dissapointed. It did not turn out to be I hoped. It turrned out more like “Puto” cakes.

    I followed the directions exactly as it is and it turned out to be more like puot mamon.

    I have to find a different recipe for this. Thank you for sharing though.

    I give it a 2 star. ;(
