Marvellous Carrot Cake

This is a very easy recipe to follow. My family’s favourite.

Ingredients

375g self-raising flour

  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/4 teaspoon cinnamon powder
  • 135g brown sugar
  • 180g castor sugar
  • 4 eggs
  • 100g corn oil
  • 100g butter – melted
  • 355g carrots – grated
  • 30g walnuts – chopped coarsely (i prefer to add more walnuts)
  • a pinch of salt

Cream Cheese Topping

  • 180g cream cheese
  • 40g butter
  • 40g icing sugar
  • 1 teaspoon lemon juice

Method

  1. Pre-heat oven to 180 Degrees Celsius.
  2. Sieve self-raising flour, baking powder and baking soda in a mixing bowl.
  3. Add in the grated carrots, corn oil, melted butter, cinnamon powder, brown sugar, Castor sugar and eggs.
  4. Mix until smooth. Add in the chopped walnuts.
  5. Pour the batter into a cake pan of your choice and bake for 45 minutes.
  6. Allow the cake to cool completely before putting on the topping.
  7. Cream Cheese Topping – mix all ingredients until smooth. Decorate your cake with the cream cheese topping. Refrigerate before serving.
