Marvellous Carrot Cake
This is a very easy recipe to follow. My family’s favourite.

Ingredients
375g self-raising flour
- 1 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/4 teaspoon cinnamon powder
- 135g brown sugar
- 180g castor sugar
- 4 eggs
- 100g corn oil
- 100g butter – melted
- 355g carrots – grated
- 30g walnuts – chopped coarsely (i prefer to add more walnuts)
- a pinch of salt
Cream Cheese Topping
- 180g cream cheese
- 40g butter
- 40g icing sugar
- 1 teaspoon lemon juice
Method
- Pre-heat oven to 180 Degrees Celsius.
- Sieve self-raising flour, baking powder and baking soda in a mixing bowl.
- Add in the grated carrots, corn oil, melted butter, cinnamon powder, brown sugar, Castor sugar and eggs.
- Mix until smooth. Add in the chopped walnuts.
- Pour the batter into a cake pan of your choice and bake for 45 minutes.
- Allow the cake to cool completely before putting on the topping.
- Cream Cheese Topping – mix all ingredients until smooth. Decorate your cake with the cream cheese topping. Refrigerate before serving.
