Mom’s Best Banana Bread
Mom made the best banana bread. This is her recipe from the 1950’s. It is best if baked in a bunt cake pan, not the bread pan as pictured.

Ingredients
(Dry)
- 3.5 cups flour
- 1.5 cups sugar
- 4 teaspoonfuls baking POWDER
- 0.5 teaspoonful baking soda
- 1 cup chopped walnuts
(Wet)
- 4 large eggs, slightly beaten
- 2 cups mashed bananas (should be ripe and skin should have black specks)
- 0.5 cup oil (I use Smart Balance OmegaÒ)
Method
- Place all the dry ingredients in one bowl, sift together.
- Place all the wet ingredients in one bowl, mix together.
- Put about one-quarter of the dry ingredients into the bowl with wet ingredients, mix till powder is wet, but don’t over-mix. Keep adding the dry powder until everything is combined.
- Use a standard size bunt pan. Grease or use spray oil to coat the pan: then coat with flour. Make sure the complete pan is covered with a dusting of flour, and then shake out the excess.
- Bake for 55 – 60 minutes.
- Test to see if fully cooked by inserting a wood toothpick into the cake. If the toothpick comes out clean, it is done. If bread matter sticks to toothpick, give it another five minutes. When done, move to a cooling rack and after a few minutes remove the bread from the pan. Allow to cool.
Variations:
- Along with the nuts, add a cup of cranberries.
- Chocolate chips and walnuts also go well together.
- Substitute macadamia nuts for the walnuts.

It’s funny how the mind plays tricks on you. As I was looking at the picture and reading the ingredients, it was as though I could smell it baking. I love banana bread. And you’re right, make sure those bananas have black specks to ensure they’re ripe (sweet) enough.

ummmmm, I love banana bread. I think this is the recipe I use, too. I made it in the 50’s so you can see I’ve been making it a long time.
