Mounds Cake

Ingredients

 

1 stick margarine, softened

1/2 c. Crisco

2 c. sugar

1/2 c. cocoa (dissolved in warm water)

1 tsp. vanilla flavoring

3 eggs

2 c. all-purpose flour

2 tsp. baking powder

1/2 tsp. baking soda

1 c. milk

 

Method

 

Cream together the Crisco,  margarine and sugar. Add the cocoa and vanilla flavoring. Add eggs, one at a time and mix well. Sift together the flour, baking powder and baking soda, add to creamed mixture alternately with the milk. Pour cake batter into three well greased and floured 9-inch cake pans. Bake at 350 degrees for 30 minutes.

 

Filling

 

1 c. milk

1 c. sugar

12 large marshmallows

14 pkg. (14 oz) coconut

 

Method

 

Place the milk and sugar in a saucepan, bring to a boil.  Remove saucepan from heat, add the marshmallows and let dissolve. Stir in the coconut and mix well. Let the filling cool for 2 minutes. Spread between layers of the cake.

 

Frosting

 

1/2 c. Crisco

1/2 stick margarine, softened

4 Tbsp. cocoa

1 (1 lb.) box powdered sugar

1 tsp. vanilla flavoring

3 or 4 Tbsp. milk

 

Method

 

Cream together the Crisco, margarine, cocoa and powdered sugar. Blend in the vanilla and milk; mixing well together. If needed, add more milk to make the right spreading consistency.
