Muffin Herb Deluxe

This muffin is not really suited for children. Since this recipe lacks the sweetness that children usually look for in a muffin.

Here is another of my muffin series. This recipe calls for oregano, thyme and basil which I consider three of the most flavorful herbs I ever tasted. The rich flavor and smell of these spices blend well with the muffin, releasing a very refreshing and cool flavor. This muffin is not really suited for children. Since this recipe lacks the sweetness that children usually look for in a muffin.

Ingredients

  • 250 grams of all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon of bicarbonate of soda
  • ½ teaspoon of salt
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 egg white
  • 2 whole eggs
  • ¼ cup of Parmesan cheese
  • 2 tablespoon honey
  • 4 tablespoon of olive oil
  • 1 cup of milk

Method

  1. Preheat oven to 200 degrees centigrade.
  2. Mix all the dry ingredients, flour, baking powder, bicarbonate of soda, salt, oregano, thyme, and basil. Set it aside.
  3. In a separate bowl, mix all the remaining ingredients. Mix well until the batter is smooth.
  4. Combine the batter and the dry ingredients. Mix until well combined.
  5. Spoon the batter in a ½ cup capacity muffin tin and bake for 20-25 minutes or until muffins are cooked.
  6. This recipe makes 12 servings.

    I love savory muffins as they can be used as table bread as well as crumbled to make some amazing stuffing if you’ve made too many.
