Never Fail Banana Muffins

These are so good, that they even turned out well when I accidentally left out an ingredient!

These delicious mini-muffins have a perfect blend of nutmeg and banana taste….yummy!

Ingredients

Granulated Sugar, 1 cup
Banana, fresh, 2 medium
Butter, salted, 1 stick
Egg, fresh, 1 large                                                                                                                                               Baking Soda, 1 tsp                                                                                                                                          Flour, white, 1 3/4 cup
Vanilla Extract, 1 tsp
Nutmeg, ground, 1 tsp
Salt, 1/2 tsp                                                                                                                                             Powdered Sugar, 1/4 cup, unsifted

Method

To make these muffins, mash 2 medium ripe bananas (this is a great recipes for bananas that are overripe).

In a large bowl, cream together butter, sugar, egg, and bananas.  Add baking soda, nutmeg and salt and mix well.  Mix in flour until all well incorporated.

Pour into greased muffin tins (or use paper baking cups) and bake at 375 degrees for about 20 minutes.  Cool on a wire rack and dust with powdered sugar.  Enjoy!
