Oatmeal Batter Bread
Delicious. Need I say more?
Ingredients
2 tsp. salt, 2 pkg. active dry yeast, about 5 c. all-purpose flour, 1 c. quick-cooking oats (uncooked), 1/2 c. light molasses, and margarine or butter.
Method
In large bowl, combine salt, yeast, and two cups flour. In 2 quart pan, mix oats, molasses, and 2 1/4 cups water. Add 1 tablespoon margarine; heat till warm. With mixer on low, beat liquid into dry ingredients Beat for 2 minutes on medium. Gradually add the rest of flour. Cover bowl; let rise in warm place for about 1 hour. Grease 2 (2 quart) round, shallow casseroles. Stir down dough; divide in half. Shape and grease dough. Cover and let rise in warm place until doubled, about 45 minutes. Preheat oven to 350 degrees. Bake for 40 minutes or until loaves test done. Rub tops with margarine.
