Pancake/griddles Cakes—serves 50

3 pounds presifted flour

3 tablespoons salt

5 eggs

1 1/4 cups melted shortening

1/2 cup baking powder

1/2 cup sugar

3 1/2 quarts milk

Sift dry ingredients. Beat eggs. Add milk and melted shortening to eggs. Add to dry ingredients and mix. Lightly grease griddle. Makes 160 of the 4 inch size cakes.
