Paratha (Shallow Fried Indian Naans)

published by Tasneem on Aug 26, 2009

The most delicious kind of naans you can can enjoy in breakfast, lunch or dinner – either with your curries, BBQs or with fresh cream, jam, chocolate sauce – the options are simply unlimited.

Ingredients

  • 3 cups plain  flour
  • 1 1⁄2 tsp salt
  • 1 tbsp butter
  • 1 cup water
  •  vegetable oil or butter( for shallow frying)

Method

  1. Sieve flour and salt into a mixing bowl and rub in 1 tbsp of butter.
  2. Add water and knead well into a soft dough. Cover  and set aside for an hour.
  3. Divide dough into 12  equal portions and make each into smooth round balls over your palm. Roll out each ball into a circle  about 6.5″ in diameter with the help of a rolling pin. Use dry flour for dusting if required.
  4. Spread the top lightly with margarine with your hand then sprinkle a little more of dry white flour.
  5.  Now slowly lift the paratha from the top and roll it to the bottom to form a thin tube-like structure. On your finger wrap the tube  round into a coil.
  6. Remove the coil from your finger and flatten with your palm and then roll again with your pin on a lightly floured base, gently taking care not to press too hard and let the air out of the edge.Do not roll them very thin.
  7. On a hot griddle or pan place the paratha. As soon as the base starts to brown turn the paratha and cook for a few more seconds. Now add oil or ghee and fry both sides till paratha is golden brown.
  8. Fry all the remaining parathas in the same way.
  9. Remove from heat and serve.

Enjoy!
