Paratha (Shallow Fried Indian Naans)
The most delicious kind of naans you can can enjoy in breakfast,lunch or dinner – either with your curries, BBQs or with fresh cream,jam,chocolate sauce – the options are simply unlimited.
Ingredients
- 3 cups plain flour
- 1 1⁄2 tsp salt
- 1 tbsp butter
- 1 cup water
- vegetable oil or butter( for shallow frying)
Method
- Sieve flour and salt into a mixing bowl and rub in 1 tbsp of butter.
- Add water and knead well into a soft dough. Cover and set aside for an hour.
- Divide dough into 12 equal portions and make each into smooth round balls over your palm. Roll out each ball into a circle about 6.5″ in diameter with the help of a rolling pin. Use dry flour for dusting if required.
- Spread the top lightly with margarine with your hand then sprinkle a little more of dry white flour.
- Now slowly lift the paratha from the top and roll it to the bottom to form a thin tube-like structure. On your finger wrap the tube round into a coil.
- Remove the coil from your finger and flatten with your palm and then roll again with your pin on a lightly floured base, gently taking care not to press too hard and let the air out of the edge.Do not roll them very thin.
- On a hot griddle or pan place the paratha. As soon as the base starts to brown turn the paratha and cook for a few more seconds. Now add oil or ghee and fry both sides till paratha is golden brown.
- Fry all the remaining parathas in the same way.
- Remove from heat and serve.
