Pitta Bread Egg Sandwich and Mixed Berries
Another great recipe for the Mediterranean diet plan.
Ingredients
4 egg whites or 1/2 cup of egg substitute
1/2 mini pitta bread
3/4 cup blueberries
1 tsp olive oil
1 cup strawberries
1 ounce low fat cheddar cheese, shredded
Optional
1 tsp chives, chopped
black pepper to taste
1/8 tsp dill
1 tsp lemon juice
Method
Add olive oil to skillet and preheat. Combine egg whites or egg substitute with spices. Pour into skillet and cook to individual liking. Sprinkle on cheese. Remove and load into pitta bread. Place on a breakfast plate and surround with mixed berries.
