Pizzeria Restaurant Pizza Dough Recipe

This is of course a bulk recipe. I came up with this recipe for a restaurant when I was around 18. It’s the closest recipe to heaven that you’ll get. It’s true New York Style dough with a hint of sweetness. It can be medium thickness to thin, depending on how you portion it.

Ingredients:

  • 50 lbs of Flour (All trumps)
  • 12 Oz Salt
  • 2 ½ Quart Dark Amber Honey
  • 2 ½ Quart Vegetable Oil
  • 3 Quart Hot Water
  • 8 Quart Cold Water
  • 6 Oz yeast

Method:

  1. Bloom yeast in 3 quarts hot water, honey & oil.
  2. Add 8 quarts of cold water
  3. Add Flour
  4. Mix for 10 minutes on low speed
  5. Portion and put in walk in to chill and stop fermentation.

During the summer put directly into the walk-in and during the winter leave out about 25 minutes to let rise.

    I am telling you, if you love pizza..this recipe will melt in your mouth.

    The first time my new employees tried it they said it made their knees weak. How’s that for a reaction?
