Scrumptious Jam Drop Biscuits

These are absolutely amazing jam biscuits.

Ingredients

125g softened butter
½ cup caster sugar
1 tablespoon vanilla essence
1 egg
1 cup self raising flour sifted
½ cup plain flour
Lemon
Strawberry jam

Method

Preheat oven to 180 degrees Celsius. Lightly grease baking tray. Cream the butter, sugar and vanilla. Then beat in egg. Add the flour and mix it through, then add a tiny squeeze of lemon juice. Using teaspoons of the mixture roll it into small balls with lightly floured hands. Place them onto the baking tray leaving room to spread. Put a small indent in each one using a small needle of some sort. Then fill the hollow with jam. Bake in the oven until is a golden brown which should take around 15 – 20 minutes. Remove from the oven tray using spatula. When cooled pack into an air tight container.

This recipe makes approximately 40 biscuits.
