Simple Healthy Carrot Muffins

Ingredients
- 3 cups whole grain flour
- 1 tbs baking soda
- 3 cups carrots pulp
- 1 cup pineapple pulp
- 1/2 cup honey
- 1 tbs cinnamon
- 1 teaspoon nutmeg
- 1 tbs vanilla
- 3 eggs
- 1 cup oil, canola or olive
- 1 cup crushed walnuts
Method
- Grease a muffins pan, put in place the little paper cups. Preheat the oven 350F.
- Mix all pulp well. Add eggs, vanilla, honey and oil.
- Blend into a nice mixture add walnuts.
- Fill at 3/4 each little paper cups of the muffins pan.
- Bake approx. 45 minutes and look in middle of one muffin if it is ready.
