Simple Healthy Carrot Muffins

Ingredients

  • 3 cups whole grain  flour
  • 1 tbs baking soda
  • 3 cups carrots pulp
  • 1 cup pineapple pulp
  • 1/2 cup honey
  • 1 tbs cinnamon
  • 1 teaspoon nutmeg
  • 1 tbs vanilla
  • 3 eggs
  • 1 cup oil, canola or olive
  • 1 cup crushed walnuts

Method

  1. Grease a muffins pan, put in place the little paper cups.  Preheat the oven 350F.
  2. Mix all pulp well.  Add eggs, vanilla, honey and oil.
  3. Blend into a nice mixture add walnuts.
  4. Fill at 3/4 each little paper cups of the muffins pan.
  5. Bake approx. 45 minutes and look in middle of one muffin if it is ready.
