Summer Hotcake

A homemade hotcake that is easy to bring along during summer getaways.

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 6 tbsp. white sugar
  • ¼ tsp. fine iodized salt
  • 1 ½ cups water
  • 4 tbsp. cooking oil

Method

  1. Sift the flour, sugar and salt
  2. Beat the egg well in a bowl. Add the sifted ingredients. Then add the cooking oil and water. Mix thoroughly.
  3. Place every half a cup of mixture in a saucepan under low heat. When bubbles appear, turn the other side. Serve with butter and hotcake syrup.

    For syrup:

  1. Melt brown sugar in a saucepan. Add desired amount of water. Add about 2 drops of vanilla.

    At first I thought it was something like a sponge cake, but when I asked my Mom to cook it for me, it was similar to a pancake so I spread a lot of pancake syrup…hmm it was good!

    It’s a summer hotcake and now it’s over. Do you have something like this that we can cook for all seasons? Thanks!…an avid fan here.
