Surfer’s Casserole
Every "starving" surfer who ended up at our beach house after hours of surfing ate this filling meal until they groaned. This simple and healthy cornbread casserole with beans and cheese is fast, cheap, delicious comfort food. Those surfers still talk about this meal ten years later. You can add ground hamburger but I wanted it to have less fat.

Ingredients
1 large can of mexibeans (pintos with chili sauce)
1 box of jiffy cornbread mix
1 bag of shredded cheddar or mexican cheese mix or any cheese you prefer
4 pats of butter or heartsmart spread
Directions
Pour and spread can of pintos in round cake pan. Pour cheese over the beans as the next layer. Mix jiffy cornbread according to instructions (1 egg and 1/3 cup of milk) on the box and pour batter over the cheese evenly. Bake according to directions for cornbread, until golden on top. Spread butter on top when removed from oven and serve with milk. Four big servings but you’ll have to make more…trust me!
