Zucchini Bread
Another one of my mother’s recipes. This is a quick bread and doesn’t require rising time.
Ingredients
2 ½ cups zucchini, shredded
3 eggs
1 cup salad oil (vegetable oil)
1 tsp. Vanilla (preferably real, but imitation is okay)
3 cups flour
1 tsp. Baking soda
1 ½ cup sugar
½ tsp. Baking powder
1 tsp. Salt
1 Tbsp. Cinnamon
½ cup chopped nuts (hickory nuts are my favorite)
(may add ½ cup raisins, soaked in hot water, drained, or ½ cup chopped dates instead or split half and half)
Shred zucchini and mix with beaten eggs, salad oil, sugar and vanilla. Blend well. Sift together all other dry ingredients. Add to zucchini mixture. Stir only until well moistened. Fold in nuts (or raisin/dates). Pour batter into greased and floured 9×5x2 inch loaf pan (standard size). Bate at 350 degrees F. for 50-60 minutes or until loaf tests done (toothpick stuck into center and comes out clean). Makes two loaves.
