A True Breakfast Burrito

How to make a tasty tortilla treat.

Ingredients

  • Tortillas
  •  Re-fried beans– black or pinto
  •  3 eggs–or more depending on how many your making
  • Shredded cheese
  • Mushrooms
  • Olives
  • Bacon & or Sausage, or substitute
  • Chopped Spinach
  • Butter
  • Salsa
  • Sour Cream
  • Pan
  • 2 small bowls

Method

 Turn stove to 200 degrees and cover the inside with butter. Put 3 eggs in a small bowl and mix until you can not see a difference between white and yoke. Then dollop one table spoon of sour cream and mix thoroughly. Add one half of a can of re-fried beans, (I prefer black) mix with eggs. pour the mixture into the pan. Let sit while you you mix sliced or chopped olives, mushrooms, chopped spinach, and chopped bacon and or sausage. Being a vegetarian I enjoy substitutes, such as morning star farms imitation meats. I’ve been told by family members who enjoy bot, that it is just as Delicious either way. Add this new mixture into what should be only slightly cooked egg bean mixture. Stir well just as you would making normal scrambled eggs, while adding cheese. When the contents of the pan is practically cooked but still not quite dry, add cheese to the top, turn off the stove, and put a lid on the pan. Have plates with tortillas ready and when the cheese is melted add the contents of the pan to the plates. Add sour cream and salsa. Rap up your burrito and it’s ready to eat.
