Asparagus and Crème Fraiche Pancakes

Nowadays people lead stressful lives, with little time to spare to prepare a meal, as it is said time is of the essence, but I have 10 great tasty recipes that will help keep your time to a minimal, but also recipes on creating tasty gourmet meals, yes your savour is here. 


Ingredients

  • Tbsp – Table spoon
  • Tsp – Tea spoon
  • 1 quantity of plain pancakes
  • 1 onion, peeled and sliced
  • 2 tbsp butter
  • 3 tbsp flour
  • 1 cup of milk
  • 250grams tub of Crème Fraiche
  • 2 tbsp chopper fresh herbs, such as: tarragon, chives, parsley and dill
  • Salt and pepper to season
  • 340 grams of asparagus Spears, well drained
  • ¼ cup of white wine
  • 1 tsp prepared mustard (recommended  – Dijon)
  • 1 tsp grated Parmesan cheese
  • 1tblsp chopper fresh herbs for garnish

Method

  1. Cook the pancakes and have them ready
  2. Cook the onion in the butter for 3-5 minutes until stoned. Stir in the flour and cook for 1 minute. Slowly add the milk and cook, stirring, until the sauce thickens. Stir in the Crème Fraiche and herbs. Season with salt and pepper.
  3. Using half the cream mixture, take 1 pancake and place 2 tablespoons of the mixture at the top and spread out evenly. Arrange 2-3 spears of asparagus on top and roll up. Repeat with the remaining ingredients. Place in a lasagna-style dish.
  4. Reheat the remaining filling, adding the wine and mustard. Pour over the pancakes and sprinkle with grated cheese.
  5. Bake at 300▫C for 5 minutes. Sprinkle with chopper herbs before serving.
