Baked Oatmeal

Not just great for breakfast, but for buffet dinners and late night snacks.

Ingredients

1/2 cup vegetable oil

3/4 cup white sugar

2 eggs

1 cup of milk

1/2 tsp salt

1 Tbsp baking powder

3 cups quick cooking oatmeal( regular oatmeal for a heartier consistency)

1/2 cup of raisins

1/2 cup of apples diced

2Tbsp brown sugar

1/2 tsp cinnamon

Preparation

Whisk together oil and sugar. mix in eggs,milk,salt,baking powder,and oatmeal. mix well and stir in raisins and apples. pour into lightly buttered casserole dish. sprinkle with brown sugar and cinnamon. bake at 350 degrees for 35 minutes until firm.

This can be assembled the night before and cooked in the morning, also would be great with other fruits and or nuts.
