BLT Breakfast Casserole

What do you do when you run out of ideas of what to cook? Choose a new recipe. It’s not as hard as it may seem.

Ingredients

  •  ½ c. mayonnaise
  •  10 slices toasted potato bread
  •  8 slices processed American cheese
  •  24 strips bacon, cooked and crumbled
  •  8 eggs
  •  2 med. Tomatoes, sliced
  •  4 T. butter
  •  4 T. flour
  •  ½ tsp. salt
  •  ¼ tsp. pepper
  •  2 c. milk
  •  1 c. shredded cheddar cheese
  •  4 green onions, sliced
  •  shredded lettuce

Method

Spread mayonnaise on one side of toast, cut into small squares. Arrange toast mayo side up in greased 9 x 13” baking dish. Top with cheese slices and bacon. Fry eggs in skillet coated with cooking spray on medium heat until set. Place over bacon and top with tomato. Set aside. Melt butter in sauce pan. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil. Cook and stir for 2 minutes or until thickened. Pour over tomatoes. Sprinkle with onions and cheddar. Bake uncovered at 350 degrees for 10 minutes. Top with lettuce and serve.
