Brown Sugar Muffins

Brown sugar muffins are one of the easiest of all to bake and as such make a great starting point for those just beginning their culinary adventures. They are also very easy to modify simply by adding a little something here or a little something there.

Brown sugar muffins are without doubt one of the most simple of all muffin recipes to make and it is this simplistic aspect that makes them so versatile and such a “kid friendly” recipe.

Being easy to modify as one’s heart or mood desires this brown sugar muffin recipe gives you back the control and creative flair that so many other recipes stifle. So let us at it.

Ingredients

  • 2 Cups of Flour
  • 1 Cup each of Milk and Brown Sugar
  • ½ Cup of Butter
  • 1 Egg
  • 1 ½ Teaspoons of Vanilla Essence
  • 1 Teaspoon of Baking Soda
  • ½ Teaspoon of Cinnamon
  • ¼ Teaspoon of Freshly Ground Sea Salt

Method

  1. Preheat the oven to 375 degrees F and grease the muffin cups of your muffin baking tray. You could also elect to use a non-stick cooking spray and/or paper muffin cups. I usually give the muffin cups a light greasing and then insert the paper muffin cups. Never had any muffins reluctant to pop out of their cups whenever I have done this.

  1. Melt the butter and then transfer it to a medium large mixing bowl and add in the egg, the milk and the vanilla essence and beat these ingredients together
  2. In another mixing bowl thoroughly combine the sugar, the flour, the cinnamon, the baking soda and the freshly ground sea salt. Make sure that all of these dry ingredients are well and truly combined as it will make mixing them with the wet ingredients much quicker.
  3. Once the dry ingredients are combined begin to slowly add them to the wet ingredients (the butter milk mixture) stirring all the while. Continue mixing until all ingredients are just combined.
  4. Now that the batter is ready add it to your muffin trays cups so as that each cup is approximately 2/3 fill with the brown sugar muffin batter. Continue until all of the batter has been portioned out.
  5. Put muffin tray with batter into your preheated (375 degrees F) oven and bake until the tops of the muffins are set (usually takes between 20 and 25 minutes depending upon your oven)
  6. Once the muffins are cooked remove them from the oven. Leave them in the muffin tray and place the muffin tray on a wire rack to cool. The muffins can be removed from the muffin tray once they have cooled down somewhat.

Serving

Serve these brown sugar muffins with a refreshing glass of milk, cup of coffee or cup of tea. If you are going to use them in a packed lunch, wrap them in plastic cling wrap before putting in the lunch box as they will keep fresh and fluffy if you do so.

You might also serve them up with a little butter and honey or jam. Being a relatively simple recipe these muffins make really good candidates for any type of icing you desire.

At our place a passionfruit/vanilla icing is the most popular icing for these simple brown sugar muffins. To make a passionfruit icing; sift 80 Grams (1 Cup) of Gluten-Free Icing Sugar Mixture into a small bowl. Then add 1½ Tablespoons of Passionfruit Pulp and stir to combine. Once the icing is ready drizzle it over the muffins and put aside to set.

You might consider adding a little bit of lemon or orange zest to these muffins and/or the passionfruit icing but above all do enjoy!!!
