Dirty Eggs

This is a dish I have cooked many times in many forms, and it is customizable for any palate, even if you’re not a big egg person.

Ingredients

2 eggs

1/3cup grated sharp cheddar

2 tbs bbq sauce

salt and pepper

Method

Put a frying pan over medium-high heat, add the eggs, just like you would do frying them. After about 2 minutes, the whites should be opaque most of the way through, use a spatula to break the egss up, mixing them together. Don’t mix them too much, or make the pieces too small, were not looking for scrambled eggs. Make sure they are relatively spread out again, we want even cooking. After another minute, mix in the sauce and the cheese, being careful to keep the chunky egg texture. The cheese should melt in 30 seconds, i usually let mine get crunchy, but thats up to you. Season to taste, and serve, baked beans and toast work well.

For some tang, try half cheddar half blue cheese

Add diced cooked sausage when you first break up the eggs if you want a meaty dish, hot dogs work great for kids

Hot sauce, or any kind of wing sauce works great, but be careful you dont overpower the eggs

Peppers add great crunch and freshness, julienned bell peppers add great color too

For a full meal, try all of the above, or mix in leftovers from last week, the possibilities are endless
