Easy Bitter Gourd Omelet Recipe

This is a quick and easy way of preparing omelet.

I can prepare this recipe in a flash but I don’t eat it. I can’t take the bitterness. Sometimes I just pick the meat or eggs since the bitterness doesn’t usually stick to it. Shrimp paste can also be used instead of ground meat.

Ingredients

  • ¼ kilo ground beef or pork (optional)
  • 1 large bitter gourd
  • 2 large eggs
  • 1 medium onion (sliced thinly)
  • 1 medium tomato (sliced thinly)
  • 2 cloves garlic (sliced thinly)
  • ¼ tsp salt
  • ¼ cup cooking oil

Method

  1. Slice bitter gourd lengthwise and take out the soft core.
  2. Slice thinly about 1/4th inch thick.
  3. Beat the eggs in a small bowl and set aside.
  4. Put cooking oil in a heated shallow pan.
  5. Stir fry the ground beef until cooked; add the gourd slices until coated with oil.
  6. Add the onions, tomatoes and garlic until onions are transluscent.
  7. Add the beaten eggs stirring occasionally until eggs are cooked.
