Easy Bitter Gourd Omelet Recipe
This is a quick and easy way of preparing omelet.
I can prepare this recipe in a flash but I don’t eat it. I can’t take the bitterness. Sometimes I just pick the meat or eggs since the bitterness doesn’t usually stick to it. Shrimp paste can also be used instead of ground meat.
Ingredients
- ¼ kilo ground beef or pork (optional)
- 1 large bitter gourd
- 2 large eggs
- 1 medium onion (sliced thinly)
- 1 medium tomato (sliced thinly)
- 2 cloves garlic (sliced thinly)
- ¼ tsp salt
- ¼ cup cooking oil
Method
- Slice bitter gourd lengthwise and take out the soft core.
- Slice thinly about 1/4th inch thick.
- Beat the eggs in a small bowl and set aside.
- Put cooking oil in a heated shallow pan.
- Stir fry the ground beef until cooked; add the gourd slices until coated with oil.
- Add the onions, tomatoes and garlic until onions are transluscent.
- Add the beaten eggs stirring occasionally until eggs are cooked.
