Easy Chayote Omelet Recipe

A quick, easy and delicious omelet with chayote (sayote).

I like my omelets stir fried rather than folded. I guess this should be called stir fried chayote with eggs instead.

Ingredients:

  • 1 large chayote
  • 2 large eggs
  • 1 small tomato (julienned)
  • 1 small onion (julienned)
  • 2 cloves garlic (crushed and julienned)
  • ¼ tsp salt
  • ¼ cup cooking oil

Method:

1.       Peel chayote and slice into two. Remove the seed. Slice chayote into 1 inch long and ¼ inch thick pieces or dice it. Set aside.

2.       Beat eggs and salt in a small bowl and set aside.

3.       Put cooking oil in a heated shallow pan.

4.       Add the sliced chayote and cook for about 30 seconds.

5.       Add garlic, onions and tomatoes and cook until onions are translucent.

6.       Add the beaten eggs and stir fry until the eggs are cooked.

7.       Serve hot.

    Hmm interesting! I love Chayote but I never though of making it into an omelette. Maybe its time to give it a try. Thanks for sharing!
