Eggless Banana Pancakes

Perfect recipe for those with egg allergies or those who wake up to realize they ate the last one yesterday.
Ingredients
- 1 cup flour
- 1 tsp brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon (or to taste)
- 1 tsp mixed spice (or to taste)
- 3/4 cup milk (adjustable for thinner or thicker pancakes)
- 2-3 small very ripe banana’s mashed.
- 1 tsp vanilla
Method
- Mix dry ingredients into one bowl and mix wet in another.
- Add wet ingredients to the dry and mix well, adding extra milk if needed for thinner batter.
- Using about 1/4 cup measure, poor batter on hot skillet or griddle set to medium-high heat. Lower if surface comes out too dark.
- Cook until edges are firming and top is bubbling.
- Flip to cook other side until golden brown.
Makes 8-10.
Variations: Crushed nuts can be added to taste for Banana Nut Pancakes.

Sounds like it would taste like banana (nut) bread. I’ll bet these are delicious! Especially soaked with butter!

I tried these. Yummy is the word. I put 1/2 cup crushed quick cooking oats and half cup whole wheat flour instead of the original thing. I tasted very good.
