Eggs Benedict

A quick and easy recipe for a Sunday morning favorite.

Each weekend my family cooks a large breakfast. Mainly because this is the only time we have together as a family. My daughter is home from college, my other daughter is out of school and my husband and I are off on the weekends. One of our favorite recipes is Eggs Benedict. We fell in love with this recipe on our honey moon in Reno. Surprisingly enough, it is not hard to make. We do it the quick way.

Ingredients

  • English Muffins
  • Eggs
  • Hollandaise Sauce
  • Canadian bacon

Method

  1. Cut English muffins in half, toast until crisp.
  2. Poach eggs (we use a microwave poacher)
  3. Mix Hollandaise sauce in pan (We use the packages, it’s much quicker and tastes delicious) Sear Canadian bacon in skillet until brown on both sides.
  4. Place Canadian bacon on English muffin halves, place poached eggs on Canadian bacon and top with hot Hollandaise sauce. Enjoy!
