Fantastic Crepes

A great recipe for cooking crepes, a thin french pancake.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups milk
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla
- 2 eggs
Method
Mix dry ingredients in one bowl (1/2 quart), and mix wet ingredients in different bowl then combine wet ingredients with dry in 1/2 quart bowl. In 6 to 8 in. pan that has been lightly buttered and preheated. Pour in a scant 1/4 cup and tilt skillet so batter is spread thinly.* Cook until light brown. Different fillings range from a type of breakfast burrito to fresh fruits and even just sugar.

*this works best if done very quickly if not you will end up having to fill in the holes with batter and your crepes will leak.
