published by Aurora1 on Aug 28, 2010

These delicious French style pancakes go well with both lemon and sugar, and ice cream and maple syrup.

Makes 10-15 pancakes

Ingredients

3 eggs

195 plain flour

375mls milk

9 tablespoons olive Oil

3 tablespoons sugar

Method

Steps 1- put the eggs, milk, flour, oil and sugar in a bowl and mix until the pancake batter is light and creamy.

Step 2- heat one large non-stick fry pan over medium heat and melt butter or pour oil into the pan then either spoon or pour some of the pancake batter onto the pan.

Step 3- cook the pancake until the corners start to bubble and occasionally lift a corner of the pancake up a tiny bit to see whether it is cooked, flip the pancake and cook on the other side, place on a serving plate and repeat until you have used all of your pancake batter.

Cook’s notes- For thicker pancakes simply do not mix the pancake batter as much and add more flour if required. For most people the first pancake does not turn out the way you imagine but usually improves with the more pancakes you cook. These delicious pancakes also taste Fantastic when you wrap them up like a crepe and eat them.
