Healthy Breakfast Yogurt Recipe

Here is a nice treat for those of you who want a fast but healthy breakfast option.

Many of us dart out the door and although we know we need to eat breakfast we find that we don’t have anything that we can grab as we go out the door. Eating a healthy breakfast makes for a better day as we are more alert and have increased mental ability. A good breakfast can also provide us with the energy we need to face the day.  Here is a recipe that is healthy for you and can be made and taken out the door with you on that commute to the office.

TANGERINE YOGURT

4 cups plain yogurt

1 tangerine

1/4 cup of honey

2 1/2 teaspoons of vanilla

It is best to thicken this yogurt before making this treat and that can be done by placing a paper towel or a piece of cheesecloth into a strainer and placing the strainer over a bowl. Pour the yogurt into the strainer and allow it to drain into the bowl overnight in the refrigerator.

 

Once the yogurt has thickened, combine the zest and juice of the tangerine into the yogurt and add what you need to in order to make it to your liking. After that, combine the vanilla and the honey and add to the yogurt.

For a more delicious treat, add items like raisins, cranberries, pecans, almonds, or fresh fruit to the top of it and enjoy right away. An even healthier breakfast would be to add granola to it! There are many other toppings that I can think of that would make this a delicious breakfast as well as a healthy one.
