How to Make a Poached Egg
A few tips to cook an ideal poached egg…..
The most important part in making poached eggs are the eggs. They must be fresh, but not quite new-laid. When too fresh, the white of the egg will not set because too milky; if the egg is stale will be equally difficult to poach it. Ideally the egg should have at least 24 hours from the time it was picked in the farm in order to be the perfect candidate for our poached eggs.
Preparation:
1. Fill in a pan with water. Add a bit of salt (if you like) and bring to boil.
2. Add a small amount of vinegar to the boiling water. It prevents dispersion of the white egg.
3. Stir the water. A small vortex will also reduce dispersion.
4. Crack the egg into a small bowl and let it slid in the pan (in the middle of the vortex).
5. Allow 3 minutes cooking time (if the egg is taken from the refrigerator); A little less if the egg is at room temperature.
6. Take the egg out of the pan using a flat slotted spatula.
7. Dip the egg into cold water for a few seconds to help prevent over-cooking.
8. The ideal poached egg has a runny yolk and no raw white remaining.
