Low-Fat Granola

Easy and economical, this recipe takes minutes to assemble and tastes great. Saves time, money and calories.
I refuse to spend over $4.00 on a small box of granola from the grocery store that lasts only a few days, and doesn’t even taste that good!
This tasty recipe is fast and doesn’t use tons of nuts or oil. I don’t recommend eating a huge amount at one time, though. For a hearty breakfast, fill your bowl with two parts plain puffed wheat cereal and one part granola.
Ingredients
- 3 cups quick cooking oats
- 1/4 cup toasted sesame seeds
- 1/2 cup unsalted peanuts, coarsely chopped
- 1/4 plain wheat germ
- 1/2 tablespoon cinnamon
- 2 tablespoons smooth natural peanut butter
- 1/4 cup honey
- 1/4 cup + 2 tablespoons apple juice concentrate
- 2 cups raisins
- plain puffed wheat cereal
Method
- Preheat oven to 350 degrees.
- Spray a jelly-roll pan with no stick cooking spray.
- In pan, combine oats, sesame seeds, peanuts, wheat germ and cinnamon.
- Mix well and set aside.
- Place peanut butter in a small bowl.
- If stiff, soften in microwave on high for 30 seconds to 1 minute.
- Add apple juice concentrate and honey.
- Pour over oat mixture.
- Stir to combine, spreading evenly in pan.
- Bake for 10 minutes, then stir to prevent burning.
- Bake fifteen minutes longer, or until golden brown.
- Remove from oven and stir in raisins.
- Cool and store sealed in refrigerator.
Makes about 6 cups.
Serve granola either on top of or mixed in with puffed wheat cereal.
