Mummu’s Finnish Pancake’s

Delicious Crepe Like Pancakes.
Made By My Grandmother In a Cast Iron Pan.

My Mummu would make stacks of these,

why did it seem my brother got the most?

Some Finns make it in one big pancake,

 in the oven in a round cake pan.

My Grandmother always used a pancake cast iron pan,

 I still have this pan today. 

whisk together until foamy,

3  fresh eggs

1/4 cup of sugar

1 1/2 cup of fresh milk

add gradually, 3/4 cups of all purpose flour

and 1/2 tsp of salt.

heat your griddle

add 1 tbs of fresh butter

as soon as it melts pour in your batter

turn when brown on bottom, (check by lifting with spatula)

We sprinkle it with regular sugar and drink a lot of coffee

Absolutely delicious, you can use berries or cinnamon

 or warm apple slices. should serve four.

    Your Pancakes are just superb! i liked the idea of making so many pancakes at a go! thanks for the easy recipe as well….as i make pancakes which requires fermenting the batter,this is just so quick and instant! thanks for providing me a go for tomorrow’s breakfast!
